This highly age-worthy Nebbiolo is an excellent accompaniment to fine foods. Named after somebody who helped out in the fields and looked after the quality of the grapes. As the quality of the Nebbiolo fruit improves, a larger proportion is added to Mimmo each year. This also means that the wine has now officially acquired local DOC status. A full-bodied red wine with great structure and well-integrated tannins, followed by a characteristic spicy aroma and a long, floral finish.

Vinification

Combined fermentation and maceration of Nebbiolo and Vespolina on the must for 20 days in stainless steel tanks, with manual punching. Both are matured on large Slavonian oak barrels for two years. Croatina has a short maceration and fermentation of 5 days in open wooden barrels. Then for one year in small French oak barrels and one year in large Slavonian oak barrels.
