Vinification

After destemming, a maceration on skin of three to four months follows, with three manual punch downs of the skins per day. No added yeasts. Malolactic fermentation. No temperature regulation. Aging for 2 years in barrel and 1 years in bottle. Minimum amount of sulphites added in the bottling stage to retain freshness throughout.
