Harvested from one of the older vineyards owned by Filippo, mostly showcasing the cheeky and grippy Bastardo grape (aka Trousseau). The grapes are left to rest overnight order to grant even more concentration to these already ripe red grapes, making for an amazingly complex 'blanc de noir'.

Harvested early in the morning. Left to rest overnight in a cold room for 36 hours. Direct, whole-bunch pressing, vinified on stainless steel for 9 months. Fine aging on the lees.
