A truly magnificent wine, of which the grape that's been used (Erbaluce) has to remain hidden on the label. Due to, as the people at Le Piane themselves put it, 'absurdity' of DOCG regulations. For this reason, they delved into the roots of the grape, finding out it is named after the dawn's light. Eos is the Greek goddess of dawn. This is definitely a wine that still lingers as dawn breaks, reminiscent of oaky Chardonnay styles of winemaking, yet it is still unique with its racy character.

Vinification
Whole-bunch grapes were gently pressed using a vertical press. The juice goes directly into big Slavonian oak barrels and undergo (malolactic) fermentation on the lees, without the addition of sulfites. Another year in barrel to refine. Then one year in the bottle to settle down. Sulfites added only in bottling in low amounts.
