Klinec definitely overdid himself with this wine, of which the flavour profile is as complex as the techniques that were used. Think dried fruit accompanied by toasty, buttery elements. Evening-altering orange wine indeed.

Vinification

The destemmed grapes are left to macerate for 5 tot 12 days. Natural alcoholic fermentation. The grapes then get pressed and poured into neutral oak casks to undergo final alcoholic and malolactic fermentation. Aging for 2 to 3 years on the grape skins on a variety of barrels including acacia, mulberry, wild cherry and oak.
