The Wild Winter Gin is the second gin from Van Boven. Together with distiller Wagging Finger, she put her Wild Woodland Gin in burnt Oak barrels for weeks, giving the gin a smoky, more complex taste (and colour!) that you would rather expect from whiskey. Yet this is unmistakably gin. We no longer drink this gin with tonic, but rather pure, with ice and a slice of fresh ginger or mixed with gingerale and if possible, a drop of Angostura Bitters. Just like the Wild Woodland Gin, this smoky Winter Gin is really the very best ingredient for the tastiest negroni of your life.
